Grandma says
too much flour
will make your cake
all dry and crumbly,
and too little
will leave it
too soft and gummy.
Yuk!
Grandma says
flour tends to settle
and pack down
in whatever container
in which it is stored,
making it too dense
to measure it just right.
So, instead of pouring it
straight into a measuring
cup,
Grandma says
it is best to take the extra
step or two
to sift it first, so as
to give it air,
then spoon it ever so gently
in,
and then level it off with
a knife.
But, she adds,
with her granny grin,
to get the most accurate
measure,
it's ok to use a kitchen
scale.
Having mixed the batter,
poured it into circle baking
pans,
Grandma stopped,
and while opening the oven,
looked at me,
and to this day still says,
with the measure you use,
it will indeed
be measured back to you.
Her cakes were the best.
Toothpicks inserted into
the center
always came out clean,
and as for the ultimate
test,
always mmm mmm good!
I'm convinced, beyond all
doubt,
what made Grandma's cakes
so good
was the extra step or two
she always took.
